INGREDIENTS:
• 1 cups whole green gram (sabut moong) soaked in 2 cups of water for 4 hours
• Salt to taste
• 2 green chilies broken
• ¼ tsp Asafoetida (hing)
• 1 tsp cumin seeds
• ¼ tsp turmeric powder
• 1 tbsp Gram flour (besan)
• A pinch soda bicarbonate
• 1 tsp lemon juice
• 100 gm paneer (cottage cheese)
• 2-3 tbsp grated cheese
• 1 medium onion
• ½ inch ginger finely chopped
• ½ tsp red chilli powder
• A pinch of chaat masala
• 1 tsp coriander chopped
• Oil to shallow fry
METHOD
• Drain and grind moong with salt, green chillies and a little water till smooth. Transfer into a bowl and add salt asafetida, cumin seeds, turmeric powder and gram flour and mix well. Add a little water to adjust consistency of a batter.
• Add soda bicarbonate and lemon juice and mix well. Set aside for a while. Heat a non-stick tawa.
• Grate paneer into a bowl, add cheese, sprinkle chaat masala and coriander and mix.
• Chop onion and put into a bowl, add paneer cheese mixture and mix well. If you want add a little ginger too. Add red chili powder and mix.
• Spread a little batter on the tawa to form a medium round pancake. Drizzle little oil all around and cook on medium heat till the underside is done.
