Winter Carrot Soup for your Soul

A little known fact is that they give a feeling of fullness due to their high fibre content thus aiding weight loss.

Carrots are great in salads and eaten raw but, a nice hearty bowl of soup always does the trick on those chilly evenings.

Made with simple ingredients guaranteed to keep you warm from the inside and out.

Time For Prep: 15 Minutes

Serves: 2-4 people

Ingredients 

Carrots3 cups
Onion    ½ Cup
Garlic       2 cloves
Ginger     1/3 Cup
Oil         2 Tbsp.
Jeera     1 tsp
Mustard Seeds1 tsp
Ajwain    ½ tsp
Hing         1/8 tsp
Salt     to taste
Black pepper¼ tsp
Sugar           2 tsp
Lemon Juice 2tsp

Preparation

  1. Heat oil to medium and add Jeera, Mustard Seeds and Ajwain.  
  2. Wait for spices to crackle and release their aroma.
  3. Add the ginger and garlic and sauté for 2-3 mins. 
  4. Add the onions and carrots and sauté until soft.
  5. While sautéing onions and carrots add salt, pepper ,sugar  and hing
  6. Sauté until onions and carrots have caramelized.
  7. Blend with water or vegetable stock according to your desired thickness.
  8. Enjoy!
